Chilaquiles Rojos

Total Cook Time : 1 hour


Ingredients:

Chile de Arbol, Tomatillos, Garlic Cloves, Tortilla Chips, Chicken Bouillon, Salt, Mozzarella Cheese, Monterrey Jack Cheese, Cotija Cheese, Crema Mexicana, Olive Oil, Chopped Onions


Instructions:

1. Add 1 tablespoon of olive oil to sauce pan, add chopped onions (1/3 cup) fry until golden brown

2. Add tortilla chips, lightly season with salt, fry for 5-7 minutes, remove from heat

3. For red salsa roast tomatillos (10 small ones or 3 medium sized) inside foil until soft (use sauce pan or comal) set aside, add chile de arbol (one handful) to foil roast until all sides are toasty

4. Blend chile de arbol, tomatillos, two garlic cloves, 1 tsp of chicken bouillon, 2-3 cups of hot water

5. Add hot salsa to tortilla chips, 1/3 cup mozzarella, 1/3 cup monterrey jack cheese, cover on high heat for 5 minutes (more cheese is optional)

6. Serve over a over easy eggs, top with cotija cheese and crema mexicana
