Pozole Rojo

Total Cook Time: 1 hour 30 minutes
Ingredients:
Guajillo chiles, Onions, Chicken Bouillon, Salt, Chicken Breasts, Chicken Legs, Garlic Cloves, Oregano, Water, Cabbage, Radish, Limes
Instructions:
1. Boil one head of onion and garlic 1 tsp oregano for 20 minutes, 1/2 pot filled with water
2. Add chicken
3. Boil Guajillo chiles 10-11 in water for about 10-15 minutes
4. Blend guajillo chiles, 1 tbsp. oregano, 2 tsp chicken bouillon, 1/2 tsp black pepper, 6 garlic cloves, 4 cups chicken broth(from boiled chicken) 1 tbsp. salt
5. Add sauce to pot of boiling chicken, cook for 45 minutes
6. Add white hominy to pot, blend garlic & onion head with 1 cup of broth strain and add to pot, cook for additional 15-20 minutes or until chicken is fully cooked
7. Serve with chopped onion, radish, cabbage, lime and sprinkle oregano
